Last week, The Court Square Blog broke the news that restaurateur Shaunna Sargent from Indie Food & Wine in Lincoln Center is opening a new restaurant at Linc LIC at 43-10 Crescent Street.1 An electrical application was approved for the site last week and construction started in the northern retail space.2 We caught up with Ms. Sargent to get her vision for her new restaurant:
The Court Square Blog: What are some of your inspirations behind being a restaurateur?
Shaunna Sargent: I just always really loved making food, using local, fresh, beautiful and natural ingredients. I’ve been cooking for a really long time. I’ve seen a lot of restaurants. I have a good understanding of what I’m doing. I’m excited to bring it here.
TCSB: Is this going to be a similar concept to your Lincoln Center location?
SS: It’s going to be very similar to what we have in Lincoln Center. We have a good thing going there, so we want to spread it around. With the wine, I took a sommelier course last year, so both my general manager and I have a lot to offer in that department as well. The decor is going to be different. It’s going to be fresher, brighter, cool a lot of different textures. I’m working with a cool young designer and I’m looking forward to seeing what will come out. We’ve been going back and forth on Pinterest, just seeing what we like, and it’s been a really good vibe so far.
TCSB: Why did you pick Court Square, and specifically Linc LIC to open your restaurant?
SS: I live in the building. I’ve been getting to know the area a lot. I see all of the energy here, all of the things going up, and the amount of people that are going to need great places to eat and drink in the very near future. It’s going to be crazy here in the next few years. I feel like now is a really good time to get in and I love this neighborhood. That’s why I wanted to it here. We need stuff like this. We just want to bring good vibes and delicious food, and beautiful wine and cocktails to the neighborhood that really needs it.
TCSB: What is your timeline for opening?
SS: For sure by the end of the year. I’m saying September now, is pretty realistic. October at the very latest.
